Vegan St. Martin's pretzels

St. Martin's Day is one of my fondest childhood memories because there were always delicious St. Martin's pretzels. I love yeast pastries and looked forward to them all year round. Now I have to bake them again every year at the beginning of November to remind myself haha. Here's a great recipe for you.

Ingredients

These Ingredients make:

4 Pretzels
  • 270 ml Oat drink lukewarm
  • 70 g Sugar
  • 50 g Vegan butter
  • 1 Pinch Salt
  • 3,5 g Dry yeast
  • 500 g Flour
  • Vegan oat cream or oat milk for topping

Instructions
 

Prepare yeast dough

  1. Heat the oat drink in a small pan until it is lukewarm.
  2. Add the yeast and sugar to the oat drink and mix well.
  3. Leave the mixture to rest for approx. 5 minutes until bubbles form and the yeast is activated.

Make the dough

  1. Mix the flour with the pinch of salt in a bowl.
  2. Add the yeast mixture and the vegan butter and knead everything into a smooth, elastic dough. You can also use a food processor to help you here and knead for 10 minutes.
  3. If the dough is too sticky, add a little more flour.

Allow the dough to rise

  1. Cover the dough and leave it to rise in a warm place for approx. 1.5 to 2 hours until it has doubled in size.

Forming pretzels and 2. walking time

  1. Place the dough on a floured work surface and divide it into 4 portions.
  2. Shape each portion into a long roll and tie into pretzels.
  3. Place the shaped pretzels on a baking tray lined with baking paper and brush them with oat cream or oat drink. Leave the pretzels to rest for 15 minutes so that they rise.

Baking

  1. Preheat the oven to 200°C top/bottom heat.
  2. Bake the pretzels for approx. 20 minutes until they are golden brown.
  3. Leave the pretzels to cool on a wire rack and enjoy them fresh.

Notes

The pretzels also taste great with cinnamon and sugar or jam. Have fun making them!
