Pumpkin Chocolate Cake

When pumpkin is in season in autumn, it doesn't always have to be just soup. This juicy pumpkin chocolate cake is the perfect combination of pumpkin, spice, and chocolatey sweetness. The pumpkin puree makes the dough especially fluffy and moist, while the dark chocolate provides the intense flavor.

Ingredients

These Ingredients make:

  • 500 g raw Hokkaido pumpkin diced, without seeds
  • 200 g Wheat flour Type 405 or 550
  • 40 g Cocoa powder unsweetened
  • 120 g brown sugar
  • 1 Pk Baking powder 15 g
  • 1 tsp Cinnamon
  • 100 ml Oat milk
  • 50 g margarine melted
  • 100 g Dark chocolate melted, for the dough

Toppings

  • 100 g Dark chocolate
  • 50 g chopped hazelnuts

Instructions
 

Prepare the pumpkin

  1. Dice the raw pumpkin (approx. 2–3 cm).
  2. Place on a baking sheet and bake at 200 °C top/bottom heat for 25–30 minutes until soft.
  3. Then mash with a fork or finely puree in a blender.

Mix the dough

  1. Mix flour, cocoa powder, sugar, baking powder, and cinnamon in a large bowl.
  2. Add pumpkin puree, margarine and oat milk.
  3. Melt 100 g dark chocolate and stir it in as well.
  4. Mix everything into a smooth batter.

Baking

  1. Grease a baking pan (loaf pan or springform pan Ø 22 cm) or line with parchment paper.
  2. Pour the dough into it and smooth it out.
  3. Bake at 200 °C top/bottom heat for approx. 35 minutes. Check with a skewer test.

Decorate

  1. Let the cake cool completely.
  2. Melt 50 g chocolate, pour evenly over the cake.
  3. Sprinkle with chopped hazelnuts.

Notes

Tips

  • The cake is wonderful to prepare in advance, as it tastes even juicier the next day.
  • If desired, you can replace the hazelnuts with walnuts or almonds.
  • Instead of brown sugar, you can also use coconut blossom sugar or date syrup.
