Turkish gnocchi

These baked gnocchi with soy mince and creamy tzatziki are inspired by the popular Turkish pasta trend! When I saw this trend, I immediately thought to myself: I absolutely have to try this with gnocchi. The result is a perfect combination of crispy gnocchi, spicy mince and refreshing tzatziki. With chilli oil and fresh toppings, this dish is a real highlight - ideal for cozy evenings or special occasions. Have fun trying them out!

Oven gnocchi

  • 500 g Gnocchi
  • 1 EL Paprika powder
  • 3 EL Olive oil

Soy mince

Tzatziki

  • 1/2 Cucumber
  • 2 Garlic cloves
  • 1 Handful Chives
  • 500 g Soy yogurt
  • 50 g Vegan cream cheese
  • Juice of half a lemon
  • Salt and pepper

Toppings

  • Chili oil
  • Parsley or coriander
  • Cherry tomatoes

Instructions
 

Preparing gnocchi in the oven

  1. Place the gnocchi in a large bowl. Marinate evenly with oil, paprika powder and salt.
  2. Place the gnocchi on a baking tray lined with baking paper and bake at 220 °C for 30 minutes. Turn once in between.

Prepare the soy mince

  1. Soak the soy granules in hot vegetable stock and leave to soak for 10 minutes. Then drain well.
  2. Heat the oil in a pan and fry the drained soy granules, onions (diced) and chopped walnuts until everything is lightly golden brown.
  3. Add the soy sauce, agave syrup, smoked paprika, mustard and tomato purée and mix well. Fry everything briefly and keep warm.

Prepare tzatziki

  1. Finely grate the cucumber and squeeze out the excess water. Press the garlic cloves.
  2. Mix the grated cucumber, garlic, chives, soy yogurt, cream cheese and lemon juice in a bowl.
  3. Season to taste with salt and pepper and chill until ready to serve.

Sideboards

  1. Arrange the baked gnocchi on two plates.
  2. Garnish with the soy mince and tzatziki and top with chili oil, chopped parsley and fresh cherry tomatoes.

Notes

Tip: This dish can also be wonderfully complemented with roasted vegetables or vegan parmesan!
