These scrambled tofu are simply brilliant. I used to love scrambled eggs and now I've discovered this delicious vegan alternative with natural tofu, smoked tofu and a pinch of kala namak for that authentic egg taste. The golden yellow color thanks to turmeric not only puts you in a good mood, but also promises a great taste. Add cherry tomatoes and fresh parsley to spice things up. Try it and you'll be surprised how delicious plant-based scrambled eggs can be!

Ingredients

These Ingredients make:

2 Portions
  • Oil for frying
  • 200 g Tofu, natural
  • 200 g Smoked tofu
  • 2 Tbsp Soy yogurt
  • 1 Tsp Kala Namak or salt
  • 1 Tsp Turmeric

Toppings

  • 5 Cherry tomatoes halved
  • Fresh parsley

Supplement

  • 2 Slices Wholemeal bread
  • Vegetable butter or margarine

Instructions
 

Fry the tofu

  1. Crumble the tofu blocks into bite-sized pieces with your hands.
  2. Heat the oil in a pan and fry the chopped tofu pieces until golden brown.

Add further ingredients

  1. Add the soy yoghurt, kala namak (sulphur salt) and turmeric and cook for 3 minutes, stirring constantly.
  2. The spices not only give the tofu color, but also a spicy taste.

Toppings and serving

  1. Stir in the halved cherry tomatoes and fresh parsley. Leave the scrambled eggs on the stove for a short time until the tomatoes are lightly steamed.
  2. Serve with wholemeal bread and garnish with fresh parsley if desired.
