Teriyaki burger sliders

These crispy, spicy teriyaki burger sliders are easy to make and a real eye-catcher. The mixture of caramelized teriyaki sauce, hearty cauliflower and the creamy cocktail sauce makes for an incredibly tasty combination!

Ingredients

These Ingredients make:

6 Burger

For the burgers

  • 6 small burger buns
  • 6 Slices of vegan cheese
  • 1/2 Cauliflower
  • 100 g Chickpeas
  • 2 cm Ginger
  • 2 Garlic cloves
  • 2 white onions
  • 1 Confederation Spring onions
  • 2 Chili peppers

For the teriyaki sauce

For the cocktail sauce

  • 3 EL Vegan mayo
  • 3 EL Ketchup
  • 1 TL Mustard
  • 1 TL Vinegar
  • Juice of half a lemon
  • 1 TL Maple syrup
  • 1 Pinch Salt and pepper
  • 1 TL Paprika powder

Toppings

  • Remaining spring onions
  • Sesame oil
  • Sesame

Instructions
 

Prepare the cauliflower

  1. Cut the cauliflower into small florets.
  2. Blanch in boiling water for 3 minutes, then drain and set aside.

Prepare the teriyaki filling

  1. Finely slice the spring onions, reserving some for the topping.
  2. Peel and finely chop the ginger and garlic. Peel and finely slice the onions. Deseed the chili peppers (optional) and chop finely.
  3. Heat some sesame oil in a large pan. Fry the spring onions, ginger, garlic, onions and chilli over a medium heat for 3-4 minutes.
  4. Add the soy sauce, brown sugar and lime juice, mix well. Stir in the dissolved starch and allow the sauce to thicken, stirring constantly.
  5. Add the cauliflower and chickpeas and simmer for 5 minutes in the teriyaki sauce.

Preparing the cocktail sauce

  1. Mix all the ingredients for the cocktail sauce in a small bowl.
  2. Season to taste with salt, pepper and paprika powder.

Assemble burgers

  1. Place the bottom half of the burger buns in a baking dish. Top each bun half with a slice of vegan cheese.
  2. Spread the cauliflower teriyaki filling on top. Pour over the cocktail sauce and sprinkle with spring onions.
  3. Place the top half of the bun on top and press down lightly. Brush with sesame oil and sprinkle with sesame seeds.

Baking and serving

  1. Place the casserole dish in a preheated oven at 200 °C fan oven.
  2. Bake the burgers for 15 minutes until the buns are slightly crispy and the filling is hot.
  3. Enjoy the teriyaki sliders straight from the oven - perfect for parties or as a special finger food! Optionally sprinkle with additional spring onions or sesame seeds.
