These stuffed potato rolls are something completely different and are perfect as a Halloween party snack! With crispy potato slices, creamy cream cheese and spicy tomato pesto, they are not only eye-catching, but also super tasty. Ideal for preparing and quick to make.
Wash the potatoes thoroughly and slice very thinly. A vegetable slicer is best for this.
Preheat the oven to 180 °C top/bottom heat.
Lightly grease a baking tray with oil. Place the potato slices next to each other, overlapping, to create a kind of continuous potato rectangle.
Sprinkle with cheese and bake
Sprinkle the potato layer generously with the vegan sprinkled cheese. Depending on which cheese alternative you use, I recommend drizzling the vegan cheese spread with oil so that it melts better.
Place the tray in the preheated oven for about 25 minutes until the potatoes are soft and the cheese has melted.
Prepare pesto
While the potatoes are baking, put all the ingredients for the pesto - pine nuts, salt, sun-dried tomatoes and fresh basil - in a blender.
Puree to a smooth consistency and set aside.
Top the baked potato layer
After baking, carefully remove the potato slab from the tray and turn it over on a smooth surface, cheese side down.
Leave the potato layer to cool completely.
Vouchers
First spread an even layer of the vegan cream cheese on top.
Spread the pesto generously over the cream cheese.
Then spread the vegan chicken-style cold cuts (or smoked tofu) and the spinach leaves evenly over the entire surface.
Forming and serving
Carefully roll up the topped potato slab as tightly as possible.
Cut into slices about 3-4 cm wide with a sharp knife.
Serve on a platter and enjoy straight away!
Notes
Tip: These potato rolls also taste great cold as a snack or party appetizer and can be refined with other fresh herbs as desired.
