These stuffed leek triangles are quick to make and are still a real eye-catcher.
They are a delicious and healthy alternative to classic dumplings.
With a hearty quinoa filling, creamy vegan cream cheese and a hint of chilli, they provide a unique taste experience. Have fun cooking!
Put a small pan on a medium heat and bring about 250 ml of water to the boil.
Add the quinoa and simmer over a low heat for about 15 minutes until the water is completely absorbed and the quinoa is soft.
Make sure to stir from time to time.
Then pour the quinoa into a sieve and drain well.
Prepare the filling
Peel the onion and carrot.
Finely chop the onion and grate the carrot with a fine grater.
In a large bowl, mix the cooked quinoa with the chopped onion, grated carrot, vegan cream cheese, mustard, tomato puree, chopped chives, chili flakes and a pinch of salt.
Stir until all the ingredients are well combined.
The filling should have a creamy yet malleable consistency.
Shape and fill the leek triangles
Carefully open the leeks along the incision.
Place about 1 tablespoon of the quinoa filling in the center of each leek leaf.
Fold the stuffed leek into a triangle by placing the open ends of the leek over the filling.
Press the ends lightly to hold them together.
Repeat this process until all the leek pieces are stuffed and shaped.
Baking
Preheat the oven to 180 degrees fan.
Place the stuffed leek triangles next to each other in a baking dish.
Pour the vegetable stock over the leek triangles so that they are lightly covered.
Then brush them with the vegan cream to give them a nice golden color when baking.
Place the baking dish in the preheated oven for about 20 minutes.
The leek triangles should be lightly browned and well done.
Take the leek triangles out of the oven and leave to cool briefly.
Garnish with fresh parsley or other herbs and serve immediately.
