Easy pancakes

Here is my classic pancake recipe for you. I always have the ingredients at home and they are quick to make for any occasion. I like to serve them with vegan protein quark, fresh fruit and nut butter. Have fun trying them out!

Ingredients

These Ingredients make:

8 Pancakes
  • 250 ml Almond drink or oat drink
  • 250 ml Wheat flour type 405 or spelt flour type 630
  • 2 Tbsp Applesauce
  • 1 Tbsp Maple syrup
  • 2 Tsp Baking powder

Vanilla protein quark

  • 2 Tbsp vegan protein powder Vanilla
  • 400 g Soy yogurt

Toppings

  • Nectarines, plums
  • Peanut butter, almonds, coconut flakes, cocoa nibs

Instructions
 

Prepare the dough

  1. In a large mixing bowl, mix together the flour and baking powder. Add the maple syrup and apple sauce.
  2. Gradually add the almond drink while stirring until you have a smooth, lump-free batter.

Heat the pan

  1. Preheat a frying pan to medium heat.
  2. Add a little coconut oil to the pan and allow to melt.

Bake pancakes

  1. Pour a small ladleful of the batter into the pan and fry into round pancakes.
  2. Bake the pancakes for about 2-3 minutes until small bubbles form on the surface and the edges are set.
  3. Turn the pancakes over and bake on the other side for a further 1-2 minutes until golden brown.
  4. Enjoy the finished pancakes with protein quark and toppings as desired!
