Yay, finally another burger recipe! These pumpkin and chickpea burgers are a delicious autumnal alternative to classic burgers. The combination of soft-boiled pumpkin, chickpeas and oatmeal makes the patties hearty and nutritious. Served with spicy hummus, caramelized onions and grilled vegetables in a burger bun, this dish is not only special but also full of flavour - perfect for a cosy dinner!

Ingredients

These Ingredients make:

4 Burger
  • 250 g Cooked pumpkin
  • 230 g Oat flakes
  • 160 g Chickpeas (cooked)
  • 1 Tbsp Mustard
  • 1 Onion finely diced
  • 1 Covenant fresh parsley
  • 1 Tbsp Cumin
  • 1 Tbsp Paprika powder
  • 2 Tbsp Agave syrup
  • 2 Tbsp Soy sauce
  • 1/2 Tsp Salt

Covering

  • 4 Burger buns
  • Spicy hummus
  • Grilled vegetables (zucchinis, peppers)
  • Caramelized onions
  • Vegan mayo

Instructions
 

Prepare the pumpkin and chickpeas

  1. Cut the pumpkin into pieces and cook in a pan of boiling water for about 10 minutes until soft. Then drain well and leave to cool.
  2. Place the cooked chickpeas in a large bowl and mash thoroughly with a fork or potato masher until you have a coarse mixture.

Prepare the pattie mixture

  1. Add the cooled pumpkin to the mashed chickpeas.
  2. Add the oats, mustard, diced onion, chopped parsley, cumin, paprika powder, agave syrup, soy sauce and salt to the bowl.
  3. Mix everything well and knead with your hands to form an even mass. Leave the mixture to rest for about 15 minutes so that the oats can swell a little.

Shape the patties

  1. After the resting time, divide the dough into four equal portions (about 190 g each) and shape into patties with your hands.
  2. Fry the patties in a pan with a little oil over a medium heat until golden brown on both sides. This takes about 4-5 minutes per side.

Top your burger and enjoy

  1. Lightly toast the burger buns. Spread each bun with a layer of hummus.
  2. Garnish with grilled vegetables, caramelized onions and vegan mayo.
  3. Assemble the burgers and enjoy immediately.
