We spent several days working on the composition of this recipe and it was more than worth it. The sandwich consists of a simple pizza dough. This is filled with minced beans before baking and baked in the pizza oven. The whole thing is then topped with fresh ingredients and an agave-mustard dressing. It is reminiscent of a Turkish pizza but with a touch of its own. You will love it!
Place the flour, water, salt, oil, agave syrup and dry yeast in a large bowl.
Mix all the ingredients well and knead into a smooth dough.
Cover the dough and leave to rest in a room-warm place for 1 hour.
Prepare the minced beans
Place the oats, kidney beans, maple syrup, mustard, tomato puree, vegetable stock, smoked paprika, soy sauce and parsley in a blender or food processor.
Mix everything into a smooth mixture.
Forming pizza sandwiches
Divide the dough into 4 equal pieces.
Flatten each piece in the middle and spread with the bean mince.
Drizzle with a little oil. Fold the pieces of pastry closed and garnish with a little oil, salt and rosemary.
Baking and topping
Place the pizza sandwiches in a pizza oven and bake for 7 minutes at 220 degrees.
Alternatively in the oven: Bake for 11 minutes at 250 degrees (top/bottom heat).
Carefully unfold the pizza sandwiches and top with rocket, tomatoes, red onions, agave-mustard dressing and parsley.
Close and enjoy.
