Peanut chocolate bar (homemade "Snickers")

These homemade, vegan Snickers are a real treat - gluten-free, without refined sugar and with an irresistible combination of creamy peanut caramel, crispy oat base and crunchy chocolate! Perfect as a healthy snack or dessert.

Ingredients

These Ingredients make:

Floor

  • 150 g Oat flakes
  • 50 g Coconut flakes
  • 150 ml Plant drink
  • 1 Tbsp Agave syrup
  • 1 Tbsp Coconut oil melted

Peanut-caramel layer

  • 200 g Dates
  • 4 Tbsp Peanut butter
  • 70 ml Water
  • 1 Pinch Salt
  • 1 Pinch Cinnamon
  • 100 g Peanuts salted

Toppings

  • 100 g Dark chocolate 70 %
  • Coarse sea salt

Instructions
 

Prepare the floor

  1. Finely grind the oats and coconut flakes in a food processor or blender.
  2. Add the plant-based drink, agave syrup and melted coconut oil.
  3. Stir everything into a sticky mixture.
  4. Pour the mixture into a rectangular or square tin (lined with baking paper) and press down evenly with a spoon or your hands.
  5. Place in the fridge for 20 minutes to firm up the base.

Peanut-caramel layer

  1. Soak the dates in hot water for 5-10 minutes, then drain.
  2. Place in a blender with the peanut butter, water and a pinch of salt and puree to a creamy consistency.
  3. Spread the caramel evenly over the cooled base.
  4. Place the mold in the freezer again for 30 minutes.

Chocolate & finish

  1. Carefully melt the dark chocolate over a bain-marie or in the microwave.
  2. Remove the cooled mixture from the mold and cut into 8-10 bars.
  3. Dip each bar into the melted chocolate or coat with a spoon.
  4. Sprinkle with coarse sea salt and place in the fridge again for 10 minutes until the chocolate is firm.
  5. Store the bars in the fridge or freezer.

Notes

If you use a larger mold, the bars will be thinner. If you use a smaller mold, they will be thicker. You can also put the mixture in a baking dish and line it with baking paper to make it easier to remove later.
