Peanut butter oat cookies

These peanut butter cookies are perfect if you fancy a quick, healthy snack! They are made with just a few ingredients, are deliciously nutty, pleasantly sweet and have the perfect crunch thanks to the dark chocolate. Thanks to the banana as a natural sweetener and the peanut butter, they are also super moist.

Ingredients

These Ingredients make:

16 Cookies
  • 150 g Oat flakes delicate
  • 1/2 Banana
  • 50 g Peanut butter
  • 50 g Coconut oil
  • 50 g Agave syrup
  • 1 Pinch of salt
  • 1 Pinch of cinnamon
  • 1 tsp Baking powder
  • 50 ml Plant drink
  • 60 g Dark chocolate chopped

Toppings

  • Melted dark chocolate
  • Coconut flakes

Instructions
 

Prepare the dough

  1. Mash the banana in a bowl with a fork to a fine pulp.
  2. Add the peanut butter, coconut oil and agave syrup and mix well. Stir in the rolled oats, baking powder, salt, cinnamon and plant-based drink.
  3. Finally, fold in the chopped dark chocolate.

Shape & bake cookies

  1. Using two spoons, divide the dough into 16 equal portions (approx. 35 g each) on a baking tray lined with baking paper.
  2. Bake the cookies for 10 minutes at 180°C top/bottom heat.
  3. After baking, flatten slightly with a glass.

Decorate & enjoy

  1. Leave the cookies to cool. Garnish with melted dark chocolate and coconut flakes and enjoy! 😍
