This dish is the perfect feel-good meal and is even suitable as a festive Christmas dinner: creamy mashed potatoes, hearty soy mince with walnuts and a spicy gravy - a combination that fills you up, makes you happy and is wonderfully aromatic. Easy to prepare and a real treat for special occasions.
Peel the potatoes, cut into cubes and cook in a pan of lightly salted water until soft (approx. 15-20 minutes).
Melt the vegan butter in a small pan. Stir in the vegan cream, nutmeg, salt and pepper. Keep the mixture warm over a low heat.
Drain the cooked potatoes and either use a potato ricer or a masher to make a fine puree. Gradually stir in the butter and cream mixture until the purée has reached the desired creamy consistency.
Prepare the mince
Soak the soy granules in the vegetable stock for about 10 minutes, then drain well.
Heat a little oil in a pan. Fry the drained soy granules, chopped onions and walnuts in it until they are lightly golden brown.
Add the smoked paprika, soy sauce, maple syrup, tomato puree and mustard. Mix everything well and sauté for a further 5 minutes.
Prepare gravy
Melt the margarine in a pan over a medium heat.
Stir in the soy sauce, tomato puree, vegetable stock, vegan cream, pepper and marjoram. Bring the mixture to the boil.
Slowly add the cornflour dissolved in water to the sauce, stirring constantly until the sauce has reached the desired consistency.
Sideboards
Spread the mashed potatoes on plates, top with the mince and generously pour over the gravy.
Garnish with red cabbage and chopped parsley as toppings and enjoy.
