Homemade potato noodles with sweet chili sauce

A simple but incredibly tasty recipe for homemade potato noodles tossed in a spicy sweet chili sauce. The soft texture of the noodles harmonizes perfectly with the slight spiciness of the sauce - topped with sesame seeds and fresh coriander, a real highlight!

These Ingredients make:

2 Portions
  • 1 kg Potatoes
  • 1 TL Salt
  • 360 g Potato starch
  • 240 ml Water

Sweet chili sauce

  • Oil for frying
  • 1 Spring onion
  • 2 Garlic cloves
  • 1 Chili pepper
  • 50 ml Soy sauce
  • 1 EL Paprika powder
  • 2 EL brown sugar

Prepare the potatoes

  1. Peel the potatoes, cut into cubes and boil in a large pan of water until soft.
  2. Drain the cooked potatoes and place in a large bowl.
  3. Mash to a fine paste with a fork or potato masher.

Making potato pasta dough

  1. Add the salt and potato starch to the mashed potatoes and knead well.
  2. Gradually add the water and continue kneading until a smooth dough is formed.
  3. Weigh the dough into 45 g portions. Roll each piece into thumb-width noodles on a lightly floured work surface.

Cooking potato noodles

  1. Bring a large pan of water to the boil.
  2. Add the potato noodles and wait until they rise to the surface - this will take about 3-4 minutes.
  3. Remove the pasta with a slotted spoon and place directly into a bowl of cold water to stop the cooking process.

Prepare the sweet chili sauce

  1. Finely slice the spring onions, crush the garlic and chop the chili pepper.
  2. Heat the oil in a pan and fry the prepared ingredients until fragrant.
  3. Add the soy sauce, paprika powder and brown sugar. Briefly reduce the sauce while stirring until it thickens slightly.

Stir in the pasta and serve

  1. Add the drained potato noodles to the sauce and mix well so that the noodles are coated in the sauce.
  2. Top with sesame seeds and fresh coriander and serve immediately.

Notes

For extra crunch, you can add roasted peanuts or cashews as a topping. If you like it extra spicy, you can also add a few drops of chili oil to the finished noodles!
