It's finally plum season!
My grandma used to bake tons of plum cake at this time of year.
For me, this cake tastes like late summer and home.
This time I wanted to try the yeast dough with wholemeal spelt flour and decided on a mixture of 50% wholemeal spelt flour and 50% type 405 wheat flour. Have fun trying them out!
Warm the oat milk slightly so that it is lukewarm (not hot).
This helps to activate the yeast.
In a mixing bowl, mix the lukewarm oat milk with the vegan butter, sugar, yeast and a pinch of salt. Tip: If using fresh yeast, dissolve the yeast in the oat milk and leave to rest for 5 minutes to activate.
Gradually add the wholemeal spelt flour and the wheat flour to the mixing bowl.
Knead the dough and leave to rest
Process the ingredients for about 10 minutes in a mixer or with a hand mixer (dough hook) at medium speed to form a smooth dough.
You can also work with your hands, in which case it will take a little longer.
Cover the dough with a cloth and leave to rise in a warm place for at least 1 hour until it has doubled in volume.Tip: If more time is available, the dough can be left to rest for longer.
Prepare the plums
Wash the plums, cut them open and remove the stones.
The plums can be cut into halves or quarters, depending on taste.
Roll out the dough and fill
After the rising time, roll out the dough on a lightly floured surface into a large rectangle that will fit on a baking tray.
Spread the prepared plums or prunes evenly over the dough, pressing them lightly into the dough so that they adhere well.
Baking and serving
Bake the cake in a preheated oven at 180°C fan oven for about 35 minutes until the pastry is golden brown and the plums are slightly caramelized.
Serve the finished plum cake with vegan cream, a pinch of cinnamon or a scoop of vanilla ice cream, as desired.
Notes
The dough can also be used for other types of fruit, such as apples or apricots.
