I love curry and wonder why I've only now come up with the idea of putting it in burritos. The filling consists of chickpeas, broccoli, peppers and an aromatic curry sauce, refined with spices such as turmeric and curry. Served with rice, Sriracha mayo and crunchy toppings such as chopped peanuts, the burritos are easy to roll up and fry briefly to achieve a perfect golden brown crust.
Cut the broccoli into small florets and blanch in boiling water for approx. 3-4 minutes. Then drain and set aside.
Cook the rice in lightly salted water according to the packet instructions. Set aside as soon as it is ready.
Prepare the Sriracha mayo
Combine the vegan mayo with the Sriracha sauce in a small bowl. Stir well until you have a smooth, slightly spicy sauce. This mixture serves as a creamy base for the wraps.
Prepare the curry
Heat the coconut oil in a pan. Peel and finely chop the onions and add to the pan. Fry for 2-3 minutes until translucent.
Peel and finely chop the garlic and add to the onions. Fry again for 1-2 minutes until the garlic is fragrant.
Add the curry paste to the pan and fry briefly until it releases its aromas.
Add the coconut milk and mix everything well.
Add the turmeric, curry powder, agave syrup and a pinch of salt. Bring the sauce to the boil briefly.
Stir the blanched broccoli, diced peppers and chickpeas into the curry sauce. Simmer over a medium heat for 5-7 minutes until the vegetables are soft and the flavors have combined.
Cover and roll up the wraps
Place the wraps on a clean work surface. First spread 1 tbsp of the Sriracha mayo mixture on each wrap.
Spread a portion of cooked rice on top, followed by the curry filling.
Sprinkle the chopped peanuts, chili flakes and fresh parsley over the filling as a topping.
Carefully roll up the wraps, folding in the sides so that the filling does not fall out.
Sauté and enjoy
Lightly grease a frying pan and fry the rolled burritos over a medium heat for 2-3 minutes on both sides until they are golden brown and crispy.
Serve the curry burritos hot and enjoy with extra Sriracha and other toppings as desired.
