If you're looking for a delicious high-protein pasta recipe, you've come to the right place. Crispy fried soy strips in chili and garlic in combination with creamy tomato pasta is so good that you won't be able to stop eating it. Have fun cooking!

Instructions
Prepare the soy cutlets
Soak the soy slices in 300 ml hot vegetable stock and leave to stand for about 10 minutes until soft.
Drain off any excess liquid and gently squeeze out the cutlets.
Fry the flavors and soy cutlets
Heat the olive oil in a pan.
Add the garlic, chilli flakes, paprika powder and oregano and fry briefly over a medium heat until the garlic is fragrant.
Add the soaked soy slices to the pan and fry everything together until golden brown.
Remove the fried soy cutlets from the pan and set aside.
Cook pasta
While the sauce is being prepared, cook the pasta al dente in a large pan of salted water according to the instructions on the packet.
Drain the pasta and collect some of the pasta water (optional, to thin the sauce if necessary).
Prepare the tomato sauce
Heat some more olive oil in the same pan and fry the diced onion until translucent.
Add the cherry tomatoes and tomato purée and mix well.
Deglaze with 300 ml vegetable stock and simmer the mixture for about 5 minutes until the tomatoes soften.
Stir the sundried tomato strips into the sauce.
Deglaze the sauce with vegan cream and stir well until it becomes creamy. Season to taste with a pinch of salt.
Merging and serving
Return the fried soy slices to the pan and mix everything together well.
Stir the cooked pasta into the sauce so that it is completely coated with the creamy tomato sauce.
Optional: Add a little of the collected pasta water to thin the sauce if necessary.
Serve the creamy no-chicken tomato pasta on plates and enjoy.
