What do you think of coconut ice cream? I love coconut ice cream, and the combination with chocolate is simply heavenly! The recipe works with just a few simple ingredients. We tried out the ice cream maker from our partner KitchenAid and the consistency was perfect.
Place the bowl of ice cream in the freezer and store at least overnight. It is ideal to always keep the bowl in the freezer so that it is always ready for use.
Heat the coconut milk, sugar, agave syrup and salt in a pan until the sugar has completely dissolved.
Allow the mixture to cool to room temperature.
Place the cooled mixture in the fridge for 1-2 days to chill thoroughly.
Prepare ice cream
Pour the chilled mixture into the KitchenAid ice cream maker.
Leave to stir for 20 minutes until the mixture reaches the consistency of soft ice cream.
Meanwhile, chop the chocolate and stir into the ice cream mixture.
Serve
Pour the finished coconut ice cream into bowls or ice cream cones.
Sprinkle with coconut flakes and chocolate and enjoy immediately.
The ice cream can also be filled into an airtight container and placed in the freezer for later. So you have a delicious, homemade coconut ice cream that you can enjoy at any time!
