I love cinnamon buns, they are an absolute standard recipe for me. This time I tried the knot technique. Inspired by the Scandinavian Kanelbullar, I have now created the best cinnamon bun recipe for you! With a filling of cinnamon, brown sugar and chocolate, rolled in fluffy yeast dough, they are super aromatic and irresistible. Whether for breakfast, as a snack or with coffee, have fun baking and enjoying!
Heat the oat drink slightly (lukewarm), then melt the vegan butter in it.
Add the sugar and dry yeast, stir well and leave to rest for 10 minutes until the yeast becomes active.
In a large bowl, mix together the flour, cinnamon, salt and optional cardamom.
Slowly work the yeast mixture into the flour while stirring until a smooth dough is formed.
Knead the dough well for 10-15 minutes, either by hand or in a food processor, until it is soft and elastic.
Leave the dough to rest
Cover the dough with a clean cloth and leave to rest in a warm place for 2-3 hours until it has doubled in size.
During the rising time, "pull and fold" the dough twice: To do this, pull the dough up on one side and fold it over the rest of the dough, repeat two or three times to bring air into the dough.
Prepare the filling
While the dough is resting, prepare the filling: Mix the vegan butter, brown sugar and cinnamon well in a bowl until you have an even mixture.
Roughly chop the dark chocolate and set aside.
Roll out the dough and fill
Roll out the risen dough into a large rectangle (approx. 0.5 cm thick) on a lightly floured work surface.
Spread the prepared cinnamon-sugar-butter mixture evenly over the dough and sprinkle the chopped dark chocolate on top.
Fold, cut and shape the dough
Fold the dough in three: Fold the top edge of the rectangle to the middle and then fold the bottom edge over it to create an elongated strip.
Gently flatten the folded dough with a rolling pin so that the filling remains well distributed in the dough. Cut 12 even strips with a sharp knife or pizza cutter.
Twist each strip of dough once (twist slightly), then wrap it around a finger and pull the end through the middle of the knot to create the typical knot shape. Place the finished cinnamon knots on a baking tray lined with baking paper.
Bake and enjoy
Brush the cinnamon buns with a little oat drink and leave to rest for another 15 minutes while the oven is preheated to 200 °C (top and bottom heat).
Bake the cinnamon buns in the preheated oven for 15 minutes until golden brown.
Remove from the oven, leave to cool briefly and enjoy!
Notes
Tip: You can vary the filling as you wish and add chopped nuts, apple pieces or raisins, for example. Have fun trying out and enjoying!
