Cocolate chip cookies

I make these chocolate chip cookies all the time and somehow I've never written down a recipe for them. That changes today! The dough is made from simple ingredients such as flour, sugar, vegan butter, vanilla sugar, baking powder and apple sauce. Chocolate drops and chopped dark chocolate provide an intense chocolate flavor. After shaping the dough balls and baking briefly at 180 °C, the cookies are soft and have the perfect consistency after cooling - slightly crispy on the outside and nice and soft on the inside.

Ingredients

These Ingredients make:

18 Cookies
  • 200 g Wheat flour type 405 or spelt flour type 630
  • 70 g Sugar
  • 125 g Vegan butter
  • 1 Tsp Baking powder
  • 2 Tbsp Applesauce
  • 100 g Chocolate drops Bake-stable
  • 60 g Dark chocolate chopped
  • 1 Pinch Salt
  • 1 Pinch Cinnamon

Instructions
 

Prepare the dough

  1. Place the flour, sugar, vegan butter, salt, cinnamon, baking powder and apple sauce in a large mixing bowl.
  2. Knead everything into a soft, even dough using a hand mixer or your hands.
  3. Now mix the chocolate drops and chopped dark chocolate evenly into the batter.

Preheat the oven and shape the dough

  1. Preheat the oven to 180°C fan oven.
  2. Shape the dough into 18 equal balls of 40 g each.
  3. Line two baking trays with baking paper and place nine balls on each tray with a little space between them, as the cookies will spread during baking.

Baking

  1. Bake the cookies in the preheated oven for 13 minutes.
  2. Make sure that they are still soft after baking and not completely baked through.

Shape the cookies and leave to cool

  1. When the cookies come out of the oven, you can gently flatten them with a spatula or glass to give them the classic cookie shape.
  2. Leave the cookies to cool completely on the baking tray, as they are still very soft at first. As soon as they have cooled, they can be easily removed from the tray.

Notes

Tips: For an extra variation, you can also sprinkle the cookies with nuts or additional toppings such as sea salt or cinnamon.
