Our food blog is 3 years old. To mark the occasion, I baked this delicious chocolate cake. Simple, chocolatey and incredibly delicious - this vegan chocolate cake is refined with apple sauce, which makes it particularly moist and is also great as an egg substitute. The creamy chocolate frosting rounds off the cake perfectly, and the right toppings make it a real eye-catcher!
Preheat the oven to 200°C top/bottom heat and grease a cake tin or line with baking paper.
Melt the vegan butter or coconut oil in a small pan and set aside.
In a large bowl, mix together the oat milk, apple puree and cinnamon.
Stir in the melted butter.
Gradually add the dry ingredients to the liquid mixture and mix with a whisk or hand mixer until you have a smooth batter.
Bake the cake
Pour the batter into the prepared cake tin and smooth out with a spatula.
Bake the cake in the middle of the oven for approx. 40 minutes.
Test with a wooden stick: if no dough sticks, the cake is ready.
Remove the cake from the oven and leave to cool completely in the tin.
Prepare the chocolate frosting:
Chop the dark chocolate and place in a bowl.
Bring the coconut milk to the boil in a small pan.
Pour the hot coconut milk over the chocolate and allow to melt briefly, stir everything evenly.
Place the frosting in the fridge for at least 1 hour until it firms up.
Assemble & decorate the cake
Spread the chocolate frosting evenly over the cake. Sprinkle with freeze-dried berries, chocolate sprinkles, coconut flakes and chopped pistachios.
Cut the cake and enjoy!
Notes
Tip: If you want the cake to have an even more intense flavor, you can add a little espresso or coffee (approx. 50 ml) to the batter - this enhances the chocolate flavor!
