Are you ready for a new cauliflower recipe?
The cauliflower is given a spicy Mexican marinade and then stuffed into tacos with guacamole.
This recipe is perfect for a great dinner with friends and will also score points at any party. Have fun trying them out!
Blanch in boiling, lightly salted water for about 3 minutes.
Then drain and set aside.
Prepare the marinade
In a bowl, mix the vegan cream, maple syrup, smoked paprika, paprika spice, chili, soy sauce, olive oil and crushed garlic cloves until well combined.
Add the blanched cauliflower florets and the cooked kidney beans to the marinade and mix carefully so that everything is well coated.
Sauté the cauliflower and beans
Preheat a frying pan to medium heat.
Add the marinated cauliflower and kidney bean mixture to the pan and fry for about 8-10 minutes until the cauliflower is golden brown and the beans are slightly crispy.
Then set aside.
Prepare guacamole
Mash the avocados in a bowl.
Add the juice of half a lime.
Stir in the fresh coriander and season with salt and pepper to taste.
Filling and serving tacos
Heat the taco wraps briefly as desired.
First spread the guacamole on the tacos.
Then add the cauliflower and bean mixture on top.
Garnish with red cabbage, red onion, vegan mayo and fresh parsley.
Serve the tacos and enjoy!
