Inspired by classic bruschetta and refined with a touch of balsamic cream, it offers the perfect balance between savory and fresh.

Ingredients

These Ingredients make:

1 Portion
  • 180 g Flour
  • 110 ml Water
  • 1/2 Tsp Salt

Covering

  • Vegan butter for frying
  • 2 Garlic cloves pressed
  • Basil chopped
  • Some vegan parmesan
  • 10 Cherry tomatoes
  • 1/2 Covenant Parsley
  • 2 Tbsp Balsamic cream
  • Pinch Salt

Toppings

  • Vegan cream cheese
  • Rocket
  • Balsamic cream

Instructions
 

Prepare the dough

  1. Knead the flour, water, dry yeast and salt into a smooth dough in a mixer.
  2. Cover the dough and leave to rest at room temperature for at least 1 hour until it has increased significantly in size.

Prepare the tomato mixture

  1. Cut the cherry tomatoes into small cubes and place in a bowl. Chop the parsley and add to the tomatoes.
  2. Season with salt and balsamic cream, mix well and set aside.

Stir the garlic butter

  1. Melt the vegan butter in a pan, press the garlic cloves and add to the pan. Fry briefly over a medium heat until the garlic turns a light golden brown.
  2. Stir in the chopped basil and leave the mixture to infuse briefly. Then remove from the heat.

Shaping and topping pizza

  1. Roll out the risen dough thinly on a floured work surface. Shape the rolled-out dough into a round pizza tin.
  2. Spread the prepared garlic and basil butter evenly over the dough. Sprinkle a little vegan Parmesan on top to give the pizza a light seasoning.

Baking

  1. Bake the pizza in a preheated pizza oven at a high heat for about 4 minutes until the crust is crispy and golden brown.
  2. Alternatively: Bake in a normal oven at 250 °C top/bottom heat for 10-12 minutes until the dough is crispy.

Pizza topping and serving

  1. Once baked, remove the pizza from the oven and top with the tomato and parsley mixture. Spread some vegan cream cheese on the pizza in small blobs.
  2. Sprinkle fresh rocket leaves over the pizza as a topping. Finish with a drizzle of balsamic cream. Serve the pizza immediately and enjoy.
