Speculoos is a must for me at Christmas! Here is a winter dessert that not only tastes heavenly, but can also be prepared in no time at all! This baked apple dessert combines the warming flavors of cinnamon and speculoos with the freshness of soy yogurt and crunchy nuts. Perfect for the festive season or a cozy dinner.

Ingredients

These Ingredients make:

4 Portions
  • 400 g Soy yogurt
  • 1 tsp Vanilla
  • 8 Speculoos cookies

Baked apple layer

  • 4 Apples
  • 1 tsp Cinnamon
  • 1 tsp Oil
  • 1 Handful Nuts chopped

Instructions
 

Prepare the baked apple layer:

  1. Wash and core the apples and cut into small cubes.
  2. Heat the oil in a pan. Add the diced apple and chopped nuts and fry until golden brown, turning regularly.
  3. Sprinkle the cinnamon evenly over the apple mixture, stir well and set aside.

Prepare the yogurt layer

  1. In a bowl, mix the soy yogurt with the vanilla extract until smooth.

Dessert layering

  1. Pour a spoonful of the baked apple mixture into dessert glasses or bowls.
  2. Top with a layer of soy yogurt.
  3. Crumble a speculaas cookie and spread as the next layer.
  4. Repeat the process: Baked apple, yogurt, speculoos crumbs.
  5. Finish with half a speculaas cookie, tuck it decoratively into the top layer.

Serve

  1. Optionally sprinkle with a pinch of cinnamon or chopped nuts.
  2. Serve immediately or keep in the fridge until ready to eat.
