African peanut stew

  • 1 large frying pan or wok

Ingredients

These Ingredients make:

4 Portions
  • Oil for frying at will
  • 2 cm Ginger finely chopped
  • 2 Onions diced
  • 2 Garlic cloves chopped
  • 400 g Sweet potatoes diced
  • 2 Paprika diced
  • 25 g Pea protein schnetzel or soy cutlets
  • 800 ml Vegetable broth
  • 125 g Peanut butter
  • 200 g strained tomatoes
  • 1 Covenant Spring onions cut into rings
  • 1 Covenant Coriander chopped
  • 1 Covenant Parsley chopped
  • 1 Tsp Cumin
  • 1 Tsp Chili
  • 1 Tsp Paprika powder

  • fresh flatbread

Instructions
 

Sauté vegetables and aromatics

  1. Heat the oil in a large pan. Sauté the ginger, onions and garlic until fragrant.
  2. Add the sweet potatoes and peppers and sauté for a further 5 minutes.

Add the schnetzel and stock

  1. Add the pea protein schnetzel and vegetable stock to the pan. Simmer everything for about 10 minutes until the sweet potatoes are cooked.

Stir in the peanut butter and spices, serve

  1. Stir the tomato puree, peanut butter, herbs and spices into the pot. Mix everything well and continue to simmer until the flavors have combined.
  2. Serve the stew with fresh flatbread and enjoy.
