Preparing quinoa balls Cook the quinoa and soy granules according to the instructions on the packet and then drain
Mix the quinoa, soy granules, finely chopped onions, garlic, rolled oats, vegetable stock, cornflour, salt and pepper in a bowl.
Form small balls and fry in a pan until golden brown. Remove from the pan.
Cooking peanut stew Sauté the garlic, onions, chili and ginger in a pan.
Add the peppers, carrots and spring onions and sauté for a further 5 minutes.
Add the vegetable stock and simmer for 10 minutes.
Stir in the tomato puree, peanut butter, fresh herbs and cumin.
Add the quinoa balls and serve Place the previously fried quinoa balls in the stew and heat for a few minutes.
Garnish the African peanut stew with fresh herbs and serve as desired.
