Stuffed zucchinis

So after stuffing the peppers last week, it's now the turn of the zucchinis. I thought about filling the zucchinis with a delicious rice mixture. The recipe is perfect for grilling. You can also easily prepare the zucchinis in the oven!

Ingredients

These Ingredients make:

2 Portions
  • 2 Zucchini

Filling

  • Hollowed out zucchini flesh
  • 200 g Rice
  • 1 Tbsp Tomato paste
  • 1 Onion
  • 4 Garlic cloves
  • 1 Tsp Smoked paprika
  • 1 Tsp Salt
  • 1 Tsp Oregano
  • 1 Tbsp Oil
  • 1 Tsp Maple syrup

Toppings

  • Vegan parmesan, cherry tomatoes

Instructions
 

Cook the rice and prepare the zucchinis

  1. Bring the rice to the boil in a pan with twice the amount of water. Then reduce the heat and simmer for about 15-20 minutes until the rice is cooked.
  2. Wash the zucchinis and cut in half lengthways. Scoop out the inside of the zucchini with a spoon and set aside.

Prepare the filling

  1. Peel and roughly chop the onion and garlic cloves.
  2. In a blender or food processor, mix all the ingredients for the filling (except the rice) until smooth.
  3. Mix the zucchini mixture well with the cooked rice in a bowl.

Stuffing and grilling zucchinis

  1. Fill the prepared zucchini halves evenly with the rice mixture.
  2. Top the stuffed zucchini halves with cherry tomatoes and sprinkle with vegan Parmesan.
  3. Preheat the grill to medium heat.
  4. Place the stuffed zucchini halves on the grill and grill for about 15-20 minutes until the zucchinis are soft and the cheese has melted.

Notes

To prepare the stuffed zucchinis in the oven, preheat the oven to 200°C (top/bottom heat) or 180°C (fan-assisted). Then bake for 30 minutes.
