Quinoa, the superfood of versatility, is combined in this recipe with soy granules, oat flakes and aromatic vegetables to make delicious quinoa balls. These small energy packs are not only rich in nutrients and proteins, but are also extremely flexible to use. Whether as a protein-rich main meal, side dish or crispy snack - the quinoa balls are convincing in every role. But the secret lies in the creamy filling made from vegan cream cheese and fresh chives. Treat yourself to this taste explosion!
Bring 180 g quinoa to the boil in a pan with twice the amount of water.
Reduce the heat, cover and simmer until the water has been absorbed and the quinoa is soft.
Soak 25 g soy granules in vegetable stock.
Drain after 10 minutes and remove excess liquid.
Prepare vegetables
Finely grate 2 cloves of garlic, 1 onion and 1 small carrot.
Finely chop 1 tablespoon of fresh parsley.
Prepare the quinoa mixture
In a bowl, mix together the quinoa, soy granules, grated vegetables, 60 g rolled oats, 15 g linseed, chopped parsley, 1 level teaspoon of salt, a pinch of chili and a pinch of pepper.
Leave the mixture to soak briefly.
Filling Preparation, shaping and filling
Mix 75 g vegan cream cheese with 3 tbsp fresh chives
Shape the quinoa mixture into balls weighing about 60 g.
Make a well in each ball and fill with the cream cheese and chive mixture.
Frying and serving
Fry the stuffed quinoa balls in a pan over a low heat for about 8 minutes per side until golden brown.
The quinoa balls are ready when they are crispy on the outside and cooked through on the inside.
Serve with a side dish or sauce to taste and enjoy!
