When it comes to the question of red or green pesto, I'm always Team Green! Here's a simple recipe for homemade pesto verde. The pesto is perfect for pasta, spreads, salads or as a dip. Prepared using a few simple ingredients and the traditional method in a mortar and pestle, it has an authentic taste and a creamy consistency. If you don't have a mortar and pestle at home, you can also process the ingredients in a blender to make pesto.

Ingredients

These Ingredients make:

4 Portions
  • 50 g Pine nuts
  • 100 g fresh basil (leaves only)
  • 100 ml Olive oil
  • 1 Tsp Salt
  • 2 Garlic cloves
  • 3 Tbsp Yeast flakes

Preparations

  1. Toast the pine nuts without oil in a pan over a medium heat until golden brown. Stir constantly to prevent burning. Then leave to cool.
  2. Peel the garlic cloves and grate to a paste using a fine grater.

Prepare pesto in a mortar

  1. Place the grated garlic and salt in a mortar and crush to a smooth paste.
  2. Add the cooled pine nuts and crush everything into a coarse paste.
  3. Add the basil leaves to the mortar one by one, crushing them thoroughly each time until a uniform green paste is formed.

Season to taste and serve

  1. Taste the pesto and season with more salt or yeast flakes if necessary.
  2. Pour the finished pesto verde into a clean jar or container and cover with a thin layer of olive oil to keep it fresh.
  3. Store in the refrigerator and consume within a week.
