Cook rice Cook the rice according to the instructions on the packaging. Set it aside and keep it warm.
Prepare the tofu marinade Heat the oil in a frying pan over a medium heat.
Grate the ginger and garlic cloves and add them to the hot oil.
Add turmeric and salt, sauté the mixture briefly until fragrant.
Fry the tofu until golden brown Place the tofu triangles in the pan and fry them over a medium heat until golden brown on both sides. Each side should take about 6 minutes.
Remove the tofu from the pan and set aside.
Prepare the sauce In the same pan in which you fried the tofu, sauté the finely chopped onions until soft.
Stir in the strained tomatoes and maple syrup.
Mix the cumin, fennel seeds, chili powder, cumin powder and cinnamon. Add them to the tomato sauce.
Integrate and serve the tofu Carefully fold the fried tofu into the sauce.
Serve the spicy kashimiri tofu on the prepared rice.
Sprinkle chili and fresh coriander over the dish.
