Homemade gyoza (dumpings)

There is nothing better than delicious dumplings.
Have you ever made gyoza yourself? The best thing is that if you make them yourself, you can decide what goes in them. It's also a lot of fun and I can only recommend you give it a try.
These small, lovingly folded dumplings are not only delicious, but also a delight for the senses.

Equipment

  • 1 Pan with lid
  • 1 Pasta roller (optional) or a rolling pin

Ingredients

These Ingredients make:

15 Gyoza

For the dough

  • 200 g Wheat flour Type 450
  • 1 Tsp Salt
  • 100 ml warm water

For the filling

  • 2 cm Ginger
  • 2 Spring onions
  • 2 Garlic cloves
  • 5 Mushrooms
  • 2 Carrots
  • 4 Tbsp Soy sauce
  • 2 Tbsp Strength

In addition

  • Oil for frying
  • 150 ml Water for steaming

Sauce

  • 2 Tbsp Sesame oil
  • 4 Tbsp Rice vinegar
  • 1 Tbsp Soy sauce
  • 1 Tbsp Chili oil
  • 2 Tbsp Agave syrup
  • 1 Tbsp Sesame
  • 1 Tbsp Chili flakes
  • Chopped coriander, spring onions

Instructions
 

Make the dough and prepare the filling

  1. Mix the flour and salt, add warm water and knead into a smooth dough.
  2. Finely chop the ginger, spring onions, garlic, mushrooms and carrots and mix together.
  3. Add the soy sauce and starch and mix well.

Roll out the dough and fill the gyoza

  1. Roll out the dough thinly (optional: use a food processor with a pasta roller on speed 1-8) and cut out round circles.
  2. Place a teaspoon of the filling in the center of each dough circle and fold into a crescent-shaped gyoza.

Prepare the gyozy and sauce

  1. Fry the stuffed gyoza in oil until golden brown.
  2. Add water, close the lid and cook for 3-4 minutes.
  3. Mix the sesame oil, rice vinegar, soy sauce, chili oil, agave syrup, sesame seeds, chili flakes, coriander and spring onions in a bowl.
  4. Serve the gyoza with the homemade sauce and enjoy!
