It's asparagus time again! So time for one of my favorite asparagus recipes! A hearty dish that combines the freshness of green asparagus, the seasoning of smoked tofu and the creaminess of a vegan hollandaise sauce in a crêpe.

Instructions
Preparation
1. cut off the woody ends of the asparagus and fry in oil with lemon slices until golden brown. Season with salt.
2 Dice the smoked tofu and fry in a pan.
Crêpes batter
Mix all the ingredients for the crêpe batter in a bowl until you have a smooth batter.
Fry the crêpes in a pan and keep warm.
Hollandaise sauce
Melt the margarine in a pan, add the flour and sauté.
Stir in the almond drink and white wine until the mixture is smooth. Bring to the boil, stirring constantly.
Stir in the hot mustard, nutmeg, salt and pepper (to taste).
Stir in the optional yeast flakes and simmer the sauce over a low heat.
Assembling and serving the dish
Fill the crêpes with sautéed asparagus and smoked tofu, roll up.
Pour over the vegan hollandaise sauce.
Serve with freshly chopped chives, parsley and other toppings of your choice.
