Banana Chocolate Cookies

Ripe bananas don’t always have to end up in banana bread, they’re also perfect for cookies! Combined with rich chocolate, these cookies turn out slightly crispy on the outside, soft on the inside, and naturally sweet. A quick and delicious treat for every chocolate lover.

Ingredients

These Ingredients make:

12 Cookies
  • 200 g Oats
  • 2 g Bananas ripe
  • 100 ml Coconut oil melted
  • 70 ml Agave syrup melted
  • 4 tbsp Baking cocoa
  • 3 tbsp Nut butter (Here hazelnut butter)
  • 2 tsp Baking powder (Here hazelnut butter)
  • 1 Pinch Salt

In addition

  • 60 g Dark chocolate

Toppings

  • 40 g Dark chocolate melted
  • 50 g Pistachios roughly chopped

Instructions
 

Prepare the dough

  1. Preheat the oven to 180 °C top/bottom heat.
  2. Mash bananas
  3. Add oats, cocoa, baking powder, and salt to a bowl
  4. Add melted coconut oil, agave syrup, and hazelnut butter and mix into a smooth dough.

Fold in the chocolate & pistachios

  1. Carefully mix the chopped dark chocolate into the batter.
  2. Leave the dough to rest for 5 minutes so that the ingredients combine well.

Shape & bake cookies

  1. Line a baking tray with baking paper.
  2. Using two spoons or your hands, form small portions (approx. 40 g each) and place on the tray.
  3. Bake the cookies for 15 minutes at 180 °C top/bottom heat until they are slightly firm but still moist.

Decorate & enjoy

  1. Leave the cookies to cool briefly after baking.
  2. Drizzle with melted dark chocolate and sprinkle with chopped pistachios.
  3. Leave to cool completely and enjoy!

Notes

Tip:
If you like it even more chocolatey, you can refine the cookies with a little extra dark chocolate in the dough or as chocolate drops.
