Peel the butternut squash, cut in half and remove the seeds. Then cut into thin slices.
Cut the smoked tofu into thin slices too.
Layers in the baking dish
Lightly grease a baking dish and alternate layers of pumpkin slices, smoked tofu, green pesto and vegan sprinkled cheese.
Season each layer with a pinch of salt and pepper.
Baking and serving
Place the baking dish in the preheated oven and bake at 180 degrees top/bottom heat for about 45 minutes until the pumpkin is soft and the cheese has melted nicely.
