Asparagus season has begun, so we're going to surprise you with a very special asparagus recipe. I've been wanting to create a delicious sandwich recipe for you all along and then came up with the idea of topping it with crispy fried asparagus. It is really successful and the asparagus harmonizes perfectly with the other ingredients! You absolutely have to try it out.
Cut the garlic bulb in half crosswise and place in an ovenproof dish together with the cherry tomatoes, oil and salt.
Roast in the oven at 200°C top/bottom heat for 40 minutes until soft.
Preparing the breadcrumb mixture and asparagus
Mix the ingredients for the breading liquid (flour, oat cream, mustard, salt) in a shallow bowl.
Cut off the ends of the asparagus. Peel and dry the asparagus. Then dip in the breading liquid, then roll gently and individually in breadcrumbs until completely coated.
Frying the asparagus
Fry the breaded asparagus in a pan with a little oil over a medium heat until crispy and golden brown. Turn occasionally so that it browns evenly.
Composition of the sandwich
Slice the baguette lengthwise.
Squeeze the baked garlic out of the bulb and spread it on the bottom of the baguette.
Spread the cream cheese generously on the baguette.
Drizzle the maple syrup over the cream cheese.
Place the crispy fried asparagus on top of the cream cheese.
Sprinkle the asparagus with lemon juice.
Place the roasted cherry tomatoes on top of the asparagus.
Spread the rocket over the cherry tomatoes.
Place the top baguette on top, cut the sandwich in half and serve.
