These delicious vegan peanut cornflakes brownies are the perfect combination of chocolate, peanut butter and crunchy cornflakes. Melt the vegan dark chocolate together with the maple syrup and coconut oil in a bain-marie.
Prepare and bake the dough
Mix the melted chocolate mix with the flour, almond flour, baking cocoa, baking powder, apple puree, almond milk and a pinch of salt until a uniform dough is formed.
Pour the batter into a square tin (approx. 20 x 20 cm) and bake in a preheated oven at 180 degrees (fan oven) for about 25 minutes. Then leave to cool.
Prepare and apply the topping
Mix the peanut butter, maple syrup, vanilla extract and a pinch of salt well. If the mixture is too thick, you can add a little melted coconut oil. Then fold in the crushed cornflakes.
Spread the peanut butter topping evenly over the cooled brownie base.
Decoration
Decorate the surface of the brownies as desired with melted vegan dark chocolate.
