We were in an Azerbaijani restaurant the other day and discovered this bread filled with potatoes. Qutab is a stuffed pastry dish that is particularly popular in Azerbaijani cuisine. In this version, potatoes, spinach and aromatic herbs are combined to create a hearty filling that is wrapped in a thin pastry. Here is my variation of Qutab.

Qutab
Dough Mix all the ingredients for the dough - flour, water, oil and salt - in a bowl.
Knead the dough on a lightly floured surface until it becomes smooth and elastic. Wrap in cling film and leave to rest for 30 minutes.
Filling Peel the potatoes, boil them and then mash them.
Finely chop the spring onions and parsley.
Mix the mashed potatoes with the Oat Cuisine, margarine, spring onions, parsley, salt and pepper.
Roughly chop the spinach leaves and add to the filling.
Preparation of the qutab Divide the dough into small balls and roll out thinly on a floured surface.
Place a tablespoon of the filling in the middle of the pastry and place the spinach on top.
Fold the pastry around the filling and press the edges together with a fork.
Fry the qutab in a pan with a little oil on both sides until golden brown.
Spread the warm qutab with vegetable butter to taste and serve. Enjoy your meal!
