I love potatoes and I love pizza. So why not simply combine the two? These potato pizza muffins are perfect if you're looking for an uncomplicated but super tasty snack that will really blow everyone away. Whether you're making them for a party or simply want to enjoy them on the go - these savory muffins are always a hit.
Wash medium-sized potatoes thoroughly and place in a pot of salted water. Cook for about 30 minutes until they are soft.
Meanwhile, prepare the smoked tofu red pesto
Cut the smoked tofu into small cubes or chop with a grater to obtain a fine texture.
Blend the dried tomatoes, oil, salt, garlic cloves, fresh basil and pine nuts in a powerful blender or food processor to a creamy pesto mixture. Add more oil if necessary.
Preparing potato pizza muffins
Lightly grease the muffin tin.
Leave the cooked potatoes to cool slightly and place the potatoes in muffin tins. Then carefully mash each potato with a glass or cup.
Place a layer of vegan sprinkled cheese on each mashed potato, followed by the prepared smoked tofu. Then apply a generous layer of the sun-dried tomato pesto and finish with another layer of vegan sprinkled cheese.
Baking and serving
Bake the filled potato muffins in an oven preheated to 180 degrees Celsius (fan oven) for about 35 minutes until the cheese has melted and turned golden in color.
Remove the baked potato muffins from the oven, sprinkle with fresh basil and a pinch of chili flakes. Serve warm and enjoy!
