Have you ever cooked gnocchi in the oven? I love everything with gnocchi, but they are best when they are really crispy and get the perfect roast in the oven. The recipe is simple and straightforward, and while the gnocchi and broccoli are cooking in the oven, you can prepare the delicious herb tzatziki dip.
Cut the broccoli into small florets. Cut the onions into rings.
Mix the gnocchi, broccoli, starch, smoked paprika, salt and pepper in a bowl until everything is well coated.
Baking
Pour the gnocchi and broccoli mixture into the prepared tin and bake in the preheated oven for about 30 minutes.
Stir occasionally so that everything browns evenly.
Preparation of the herb dip
Grate the cucumber, press the garlic and chop the dill.
Mix the soy yogurt, cream cheese, grated cucumber, crushed garlic, mustard, oil, apple cider vinegar, chopped dill, salt and pepper in a bowl. Stir well until everything is evenly combined.
Serve
Serve the oven gnocchi on the herb dip.
Sprinkle with chili flakes to taste and enjoy!
Notes
Tip: If you have time, leave the gnocchi and broccoli in the marinade for about 15 minutes before placing them in the tin and putting them in the oven. This intensifies the flavors and gives the dish an even more delicious taste.
