Chickpea and peanut blondies

These blondies are not only incredibly juicy and fudgy, but also packed with plant-based protein thanks to chickpeas and peanut butter. They do not require any flour and can be prepared in just a few minutes. Perfect as a snack or healthy dessert!

Equipment

  • 1 small baking tin 20 x 20 cm
  • 1 Blender or hand blender

Ingredients

These Ingredients make:

  • 250 g Chickpeas (cooked and well rinsed)
  • 80 g Peanut butter (alternatively almond butter or sunflower seed butter)
  • 100 ml Oat milk
  • 60 ml Agave syrup or maple syrup
  • 1 tsp Cinnamon
  • 1 Pinch Salt
  • 1 1/12 tsp Baking powder
  • 100 g Dark chocolate

Instructions
 

Preheat the oven

  1. Preheat the oven to 180 °C (top/bottom heat).
  2. Line a small baking tin (approx. 20 × 20 cm) with baking paper or grease lightly.

Prepare the chickpeas

  1. Thoroughly rinse and drain the cooked chickpeas.

Make the dough

  1. Blend the chickpeas, peanut butter, cinnamon, salt, oat milk, agave syrup and baking powder in a powerful blender or with a hand blender until smooth.

Fold in the chocolate

  1. Roughly chop the dark chocolate.
  2. Stir about 60 g of it into the dough, keep the remaining 40 g for spreading.

Bake blondies

  1. Pour the batter evenly into the prepared baking tin.
  2. Sprinkle with the remaining chocolate.
  3. Bake in the preheated oven for approx. 30 minutes until the surface is lightly browned and the center is firm.

Cool down & enjoy

  1. Allow to cool completely, then cut into pieces
  2. Serve with an optional dollop of plant-based yogurt or peanut butter.

Notes

Tip: These blondies are not only super juicy and rich in protein, but also perfect for taking away or as a healthy snack between meals!
